Monitoring fridge and freezer temperatures regularly is essential to ensure that foods aren't stored in the Temperature Danger Zone of between 5°C and 60°C.

Food that is stored in the Temperature Danger Zone has good conditions for bacteria to grow and reproduce, potentially to levels that are harmful to humans.
